The results found that hydrogen water can significantly reduce the result of exposure to excessive calcium nitrate in Chinese cabbage seedlings. This effect is related to the level of antioxidant enzymes in cabbage tissues provided by hydrogen water, which reduces the levels of hydrogen peroxide and superoxide anion, and reduces tissue oxidative damage. Research has also conducted in-depth studies on upstream effects such as cell transporters that cause these effects. . It is suggested that hydrogen may be able to inhibit the transport of nitrate through specific protein channels, so that more nitrate is stored in the roots, and the transport to some tissues on the ground is reduced.

The results of this study indicate that watering Chinese cabbage with hydrogen water has the potential to be a simple tool to reduce its nitrate level and improve vegetable quality. Combined with the results of related past studies, hydrogen water, as a potential tool for vegetable planting, can not only increase yield, increase nutrients, but also reduce the content of harmful substances.
